Spring/summer harvest is truly my favorite. If there’s anything I despise when it comes to food, is a bland, boring salad, so I enjoy sprucing things up a bit. This heirloom tomato + cucumber salad with blood orange and apricot is a fun, nourishing summer salad recipe. Here’s how to make this refreshing and healthy salad:
Tomato + Cucumber Citrus Salad with Blood Orange and Apricot Recipe
INGREDIENTS
+ Spinach (you can use any greens you want, or none at all)
+ Apricot
+ Blood Orange
+ Heirloom Tomato
+ Cucumber
+ Salt
+ Pepper
+ Avocado oil (olive oil is fine, too!)
+ Lime
PROCESS
Create a bed of spinach on a plate or in a bowl. Add thinly sliced heirloom tomatoes, sliced cucumber, blood oranges and top with apricot. Sprinkle salt and pepper to taste.
For dressing add juice of half a lime and La Tourangelle avocado oil

You and also add your dressing ingredients into a separate bowl and mix then pour onto your salad!
